New to "Gluten Free"?

What is Gluten?

  • Gluten refers to the proteins found in wheat endosperm (a type of tissue produced in seeds that's ground to make flour), barley, rye, and triticale (wheat/rye hybrid)

What to avoid?

  • There are 3 main food-stuffs which contain these proteins:
  1. Wheat
  2. Barely (malt)
  3. Rye
  • Notable foods to be weary of:
    • Bread
    • Pasta
    • Cakes/Cookies
    • Cereals
    • Beer
    • Soy Sauce
    • Soup
    • Food coloring
    • Oats (Debatable, best to use gluten free oats instead)

Um, so what can you eat?

  • These foods are naturally gluten free:
    • Raw fruits
    • Raw vegetables
    • Meats (plain, w/o seasonings!)
    • Fish
    • Spices
    • Dairy
    • Oils
    • Water
    • Rice
    • Potatoes
    • Nuts
